Summer Style: Floral Romper and Floppy Fedora Forever 21 just made me SOOO HAPPY!!!! Seriously though, sometimes it’s a hit or miss and for me, usually a miss. But the other day I decided to venture out into the 4 floor Forever 21 on Newbury Street in Boston and lets just say it was a HUGE WIN! Just look at this adorable comfy ROMPER and HAT!

She’s also my swavey coworker who is not only a music buff,  but has a love of all things fitness. You can find her DJing anything from spinning classes to fashion shows, yoga events to weddings, this girl knows how to entertain!

Little Updates: Trip to Nicaragua

So….I have not posted in a week or so, and just wanted to update you all that I will be posting again soon! Warm weather is here (and doesn’t last very long in Boston) which means vacations, weddings, beach, etc. but I have not forgotten about you! I may be posting less frequently, but will be adding in some quick life updates to keep in touch!

The hubby had his last vacation week for the year before he enters into his third year (out of 6) as a plastic surgery resident at Harvard. We headed off to Nicaragua. Why Nicaragua? Well, we needed to escape from reality and just BE. Be with each other, no distractions, beach, yoga, sun, and all that good stuff.  It was AMAZING to say the least!!!

I had wanted to do a sneak peak of our trip before leaving, but just could not find the time. Anyways, here is one of my favorite pictures below which pretty much sums up a lot of things that I love: him…obviously, the beach, sun, ocean, sand, and seeing him surf for the first time (he always told me he could surf but after 5 years together I never saw him actually surf until now!)!

Also, seeing him healthy and active in this picture reminds me that even though during his surgical residency program, I can feel so far away from him while he deals with unfathomable exhaustion and excruciatingly long work hours, I will always have this picture to remind me that he always comes back. He is still that goofy, healthy man that I married no matter how much he is worked to the bone.

First of all, let me tell you, I have fallen IN LOVE with Williamsburg, Brooklyn!!!!!!! From the moment we entered this little town in Brooklyn we saw coffee shops, vintage stores, cobblestone streets, abnormally amazing graffiti, men with beyond good hair cuts, and I just could not wait to start walking around!

Sneak Peak Into Our Upcoming Brooklyn, NY Trip!

blog post The hubby has the whole weekend off, which is few and far between, so we are taking advantage of this time together and making a hipster pilgrimage to Brooklyn, NY! We are staying in a little area called, Williamsburg, known for its vintage vibe, flea markets, unique shopping, and cute restaurants.

And here it goes…

1. Checking into a funky hotel (we found an amazing deal on jetsetter.com) called, King and Grove, in Williamsburg. Too bad it’s not summer yet because they have an outdoor pool, but we honestly wouldn’t be sitting by a pool during a quick weekend trip anyways (so I tell myself).

2. Friday night we’ll be stopping in for a quick taco at this Mexican Cantina, Mesa Coyoacan.

2. Then, later that night we will be heading to the Music Hall of Williamsburg to see Betty Who play live at a sold out concert!

3. Saturday, doing some flea market/antique shopping, picture taking, and wondering the streets!

Spicy Baked Marinated Tofu with Cabbage-Veggie Stir Fry

Spicy Baked Marinated Tofu with Cabbage-Veggie Stir Fry

This is by far one of the best tofu dishes I have ever had!!! It has the perfect amount of spice and flavor to satisfy your belly, and I love how the cabbage-veggie stir fry creates a mix of vibrant colors! Also, fast fact, WebMD says that cabbage helps with stomach pain, morning sickness (calling all you pregnant ladies), and it’s also used to prevent weak bones and cancer! It’s one of the lowest calorie veggies and is packed with antioxidants and vitamins A and K!!!! Also, this dish is HUSBAND APPROVED!

*Notes: Tofu needs to be marinated for 30-40 minutes. Preheat oven to 350 degrees f.Spicy Baked Marinated Tofu with Cabbage-Veggie Stir Fry

 

Ingredients…

Baked Tofu
1 block extra firm tofu
2 Tablespoons extra virgin olive oil
2 Tablespoons hot sauce
1 Tablespoon low sodium tamari sauce (or low sodium soy sauce)
2 large garlic cloves minced
1 teaspoon paprika
1 teaspoon sesame oil
1 teaspoon white cooking wine
a dash of salt and pepper

Cabbage Veggie Stir Fry
1 Tablespoon extra virgin olive oil
2 cups green cabbage chopped
2 cups red cabbage chopped
2 small/medium sized carrots sliced
1 red bell pepper chopped
1 1/2 teaspoon paprika
1/4 heaping teaspoon red pepper flakes
1/8 heaping teaspoon cayenne pepper
1 1/2 teaspoon rice vinegar
1 1/2 teaspoon low sodium tamari sauce (or soy sauce)

*Heaping means: a little more than what’s listed*

Garnish
toasted sesame seeds

 

TOFU Directions……

*Make sure to preheat oven to 350 degrees f

1. Open the tofu package and using paper towels and your hands gently press on the tofu and let excess water out. Do this until most of the water is gone. Slice the tofu into small rectangular shapes.

2. In a small bowl, combine the olive oil, hot sauce, tamari (or soy sauce), minced garlic, sesame oil, white cooking wine, and a dash of salt and pepper. Mix until blended.

3. Dip each piece of tofu into the liquid mixture to coat each side. Then set the tofu aside in a separate bowl, adding any remaining mixture, and marinate for 30-60 minutes in the refrigerator.

4. Spray a baking sheet with nonstick cooking spray (I use nonstick olive oil spray), then spread the tofu out evenly.

5. Bake at 350 degrees F for 30-40 minutes (cooking time depends on how thin or thick the pieces are. If they are cut thicker I would leave them longer in the oven and vice versa!)

6. Flip ’em over and cook the other side for 15-20 mins.

7. Place on top of the veggie mixture and sprinkle on some toasted sesame seeds!

Cabbage Veggie Stir Fry Directions….

1. Place all of the chopped veggies in a large bowl.

2. Mix the olive oil, smoked paprika, red pepper flakes, cayenne pepper, rice vinagr, and tamari sauce (or soy sauce) in a small bowl.

3. Add the small sauce mixture to the large veggie bowl and stir until the veggies are coated evenly.

4. Use a deep frying pan or stir fry pan and stir fry the veggie mixture on medium to medium/high heat until the carrots are semi-soft around 15/20 minutes.

5. Add salt and pepper to taste. Serve alone with the tofu or over rice or noodles!

2-Minute Humus Veggie Wrap

2-Minute Humus Veggie WrapSo simple, easy, and fast! This wrap has become my go-to for a healthy quick lunch, and my staple meal for beach days, picnics in the park, or hanging by the pool! I almost always have these ingredients in my house and when I pack it to go and wrap it with tin foil, it never gets soggy! The raisins give the wrap an amazing added flavor, which is my favorite part! This is a must try.

It is also a HUGE hit with kids!!!! Last summer after bringing a few wraps to the beach, my friend’s 2 and 5 year-old daughters split one of the wraps. They loved it so much that my friend asked for the recipe and now makes them all the time!

 

Ingredients…

1/4 carrot
1/4 organic cucumber
1 small handful of raisins
humus
1 tortilla wrap (I love using a spinach wrap like Maria and Ricardo’s Spinach Tortillas from Whole Foods)

*note: Only a small amount of carrot and cucumber are needed for each wrap but I eat the rest or make extra wraps!

Wisdom Wednesday: Taking chances

Wisdom Wednesday: Taking chances The older I get the faster life seems to go.  This life of mine, how quickly you have started to pass, each day, each year, each second. Did I take any small or big chances on a daily basis? Yes, a few,  but enough to write a really good chapter in a book…I wonder? I let fear hold me back. I make up stories in my mind about what could go wrong; am I going to be uncomfortable, will I look silly? There were so many moments and times I did not push myself to just go with the flow. It took experiencing my husband having such little time to realize how time truly matters, and with that time, taking chances makes it memorable and more precious than before.

I have decided to end these “stories” and stop allowing them to hold me back from actually living and making amazing memories. Time is going to keep passing and it is up to each of us to make that time meaningful and full of fun so that we can look back on life and say that we have truly lived. Each one of us is connected to this world and each one of you, them, her, him, everyone. Our chances inspire others to take chances, our chances lead to opportunities we never thought possible. Sometimes a chance my not be by choice but literally by chance, and those chances can become beautiful creatures in their own right.

We have been given this intricate, complex mind and the ability to think and take these chances; chances that are big like signing up for a marathon or helping end world hunger; or chances that are small like deciding to have dinner with friends versus eating on your sofa while watching TV in PJ’s. A chance could be picking up an instrument and getting to the point where you play at an open mic night, it could be submitting your poetry or artwork to a local event or online contest. It could be starting a blog, taking a spontaneous trip, or saying “hello” to a stranger.

There may not be a perfect moment for something and maybe it won’t be as great as you thought, but at least you took that chance. What do you want your legacy to be? Your life is like a book of stories, chapters, sentences, moods, characters. You have the chance to make it an interesting one. Don’t regret what you can choose. Take that chance today, go out of your comfort zone and just DO it!

30 min run mix: Keep Going

I exercise because it gives me strength, emotional and physical.  Whatever situation I am faced with, I compete with myself to be stronger, push through, and keep going. I made this playlist to help push myself and crank up my 3 mile run to a 4 mile run! I may feel like giving up, I may feel overwhelmed or exhausted, but I can find strength to keep going and make it just a little longer and in the end, it will all be worth it.

I just downloaded this amazing app called, Map My Run, which tracks your running route, distance, and average pace!!!!!! Um..amazing right?  I also learned from this app that I run between 8-9 minutes a mile, which is pretty good but I can still push harder and keep going.

Healthy Chocolate Peanut Butter Banana Smoothie

Healthy Chocolate Peanut Butter Banana Smoothie

High protein and healthy fat = YES Ma’am!  Quick, easy, and perfect for after that intense workout or when you need a quick filling snack! This smoothie literally tastes like a milkshake and when the hubby and I start having some kiddos, I for sure am gonna make this for them!  After a 3 mile run and a mini at home workout yesterday, I made this right away which filled my body with the protein and nutrients it needed, and at the same time helped curve my appetite until dinner! Success!!!

Ingredients:
2 tsp cacao powder
6 ice cubes
1/2 to 1 cup almond milk (depending on your desired consistency)
1 banana
1 TBS Peanut butter
(I use Justin’s Classic Peanut Butter, found at Whole Foods)

 

NOTE: Cacao powder is a healthy raw chocolate powder packed with antioxidants! I purchase it at Whole Foods and you can find out more about it by clicking HERE.  Check out my other smoothie post using the same powder HERE

 

Directions

I have a Vitamix  so I usually just throw it all in and blend until smooth. Some other blenders may have a difficult time with the ice so you can either try crushing up your ice cubes first or using less ice cubes and a frozen banana and water instead!

*If you love smoothies I highly recommend saving up for a VItamix and don’t worry, you do not have to buy a brand new one!!! I purchased a reconditioned one for half the price and it works aaaahhhmazing! Click HERE to see the reconditioned Vitamin blenders.*
